I'm having a hard time finding a concrete answer as many of the replies are concerning older versions of the quest.

There's 12 bosses in ICC. Assuming you're soloing content and you are a DK or a Warrior, you won't be able to heal Dreamwalker, so you can forget about her shard each week. So, 11 bosses.

11 bosses, with, on heroic, a 75% chance to drop a Shadowfrost Shard. That means you'll obtain, roughly, 7.25 shards a week, if you do 25h of all bosses including arthas.

Since you require 50 shards, it will take you approximately 6.8 weeks, give or take based on luck. You can expedite this by either being a paladin and healing dreamwalker, or by begging healer friends to top her off each week.

in either case you're looking at roughly 6-8 weeks. And it's possible my fraction/shard averages are slightly off, but even if they are, it probably wouldn't drastically change the result.

Even if you got all 12 bosses to cough up shards every single week you're still looking at 5 weeks. On average it should take roughly two more than that to complete it.

if you are doing 25m Heroic you have better odds of one dropping.

IIRC 50% on normal, 75% on heroic.

It tooked me around 6 weeks to complete. It really depends on luck and just do only 25m HC. ;)

I usually got around 5-8 shards/ful clear so 8 weeks is what it usually takes i think.
